You can also buy tons of accessories for the weber that makes smoking even easier. The coals will be just enough heat to get your kettle to 250 degrees, while slowly spreading to maintain that temp. You need no extra equipment for a kettle, just make a snake of charcoal 2X2 light on one end. Setting up a zone for indirect heat and adding wood chunks for some smoke flavor. This can all easily be replicated on any charcoal grill. A kettle is only 1 grate, unless you add an extension ring.

It also has two places for a grate, so you have 2 X (14", 18", 22") cooking space.

A sliding door on the side allows for access to add charcoal. The WSM is just more set-up to be a dedicated smoker only, it has a giant charcoal ring that you sit on a grate and a water pan that diffuses the heat. They are pretty much the same thing, a big metal box that contains heat.

If you ever get to the point where you need more, then I would recommend the 22” WSM over the 18”…or some kind of extension mod for the kettle ESPECIALLY with smaller amounts of smoked food and it being cheaper. I did consider at one point getting a 22” WSM and modifying it to become a regular style grill when needed but after having the kettle for this long, I think it’s the way to go, or at least get started. So considering every cook I had over the years, I would recommend the kettle to start, being it’s cheaper and way more versatile… you can also get great mods for it to up your game as you go (griddle plate, pizza kettle, Santa Maria style lift grate, slow and sear, vortex, many many more.) It’s just easier to clean and setup in most cases.

However, many years later, I did buy a 22” Weber Kettle and utilize it waaaay more. I now kinda wish I bought the 22” instead. It did get kinda cramped when doing a few parties with it. I started with an 18” WSM, LOVED it! (Still do).
